Bisutoro is an elevated Japanese American Sushi Bar and Grill located in the Biltmore area of Phoenix, Arizona that serves an incredible array of Japanese Whiskeys and focuses on plating up beautiful, sustainable ingredients.
Recently they held an intimate bluefin tuna breakdown event, using a precise and detailed process to slice each part of the tuna down to turn over to the kitchen, who in turn created incredible dishes for guests to enjoy. Never have I had fish as fresh as this, and it was an experience like nothing I could ever imagine.
This was a very intimate and incredible experience, starting from the moment the team began lifting the large bluefin tuna to the table. Each chef was precise with every movement, knowing the right technique to slide the knife effortlessly through every part of this incredible fish. With every dissection, there was an educational description of each section by the amazingly knowledgable emcee, talented sushi chef Victoria Carnes, who's passion for the craft is so abundantly evident with every beautiful presentation.
The meticulous break down of the fish took less time than I had imagined, as every move was executed with beautiful efficiency, taking about 40 minutes in total to deliver this incredible display. That the team made this all seem so incredibly easy as they went piece by piece starting with the fins, and then moving on to the head, an incredible display to be sure. It was captivating watching them with every moment, a fluid team working on their masterpiece. You could tell that there is a passion for the art and an intense respect for the fish, handing each beautiful piece off to the chefs behind the sushi bar, to begin to prepare each tantalizing bite for us all to eat, an incredible show to watch as each precise slice was transformed to individual plates of beauty. Every bit melted in my mouth.
The fish was incredible, but I think the true delight is in watching this amazing team of chefs prepare the meal with a choreography as precise as any performance on a stage or screen. There was an almost effortless flow of movement from the chefs breaking down the tuna, to the story behind each section, to the handoff to the back of the house to prepare and deliver this incredible spectacle.
This is an event that truly cannot be missed. And you're in luck as the next Bluefin dinner is already on the calendar for February 9, 2023. It’s no surprise that tickets sell out fast and I can't recommend this enough. This is a once in a lifetime experience!
