When you’re torn between two places, pick the one that matches the story you want to tell later.
Molten Chocolate Lava Cakes for Two
Some nights don’t need a reservation.
They need low light, something chocolate, and the kind of dessert that makes the whole house smell like you planned this on purpose.
These molten chocolate lava cakes are my favorite kind of impressive because they look like a restaurant moment, but they’re secretly simple. Warm edges. Gooey center. A little powdered sugar snowfall. And if you add vanilla ice cream, it’s basically a love language.
This recipe makes two lava cakes, because February is for sharing. Or not. No judgment.
What you’ll need
Ingredients (for 2 cakes)
4 oz semi-sweet chocolate (about 2/3 cup chips)
4 tbsp unsalted butter, plus extra for greasing
1/4 cup powdered sugar
1 large egg
1 large egg yolk
2 tbsp all-purpose flour
1/2 tsp vanilla extract
Pinch of salt
Optional but highly encouraged
Vanilla ice cream or whipped cream
Fresh berries
Flaky sea salt
Espresso or a splash of bourbon in the batter (1 tsp)

How to make lava cakes for two
1) Prep the ramekins
Heat oven to 425°F.
Generously butter two ramekins. Dust with cocoa powder or a little flour, then tap out the excess. Place ramekins on a baking sheet.
2) Melt chocolate + butter
In a microwave-safe bowl, melt chocolate and butter in 20–30 second bursts, stirring between each, until smooth. Let it cool for 1 minute.
3) Whisk the batter
Whisk in powdered sugar until glossy.
Add egg and egg yolk and whisk until the batter looks silky and slightly thickened.
Whisk in vanilla and a pinch of salt.
Fold in flour just until combined. Do not overmix.
4) Fill and bake
Divide batter between ramekins.
Bake 10–12 minutes. The edges should look set, but the center should still look soft and slightly jiggly.
5) Unmold and serve
Let sit 1 minute. Run a knife gently around the edge, invert onto plates, and lift off ramekins.
Dust with powdered sugar, add ice cream, and serve immediately.
How to know it’s perfect
If you bake 10 minutes, it’s very molten.
If you bake 12 minutes, it’s more fudgy with a softer center.
Every oven varies, so your first batch is your “get to know you” cake.
Make-ahead tip (my favorite)
You can make the batter, fill the ramekins, cover, and refrigerate for up to 24 hours.
Bake straight from the fridge, adding 1–2 extra minutes.
