Meet Chef Jorge Gomez
Chef Jorge Gomez, a native of Hermosillo, Sonora, Mexico, developed his passion for cooking at a young age while assisting his grandmother in the kitchen. From scratch, he learned the art of making tamales, tortillas, and chocolates.
Gomez's culinary journey began at the prestigious L'Olivier, a French restaurant in Mexico City. Eager to further his skills, he soon enrolled at the Culinary Institute of Mexico in Puebla, where he graduated with honors. He then embarked on a culinary exploration throughout Mexico and Europe, refining his techniques in international cuisine, notably, interning as a pastry chef at Hostal de La Gavina in Spain, gaining invaluable experience which will later pave the way towards a creative culinary resume.
After opening a French restaurant in Mexico City, Gomez's sister persuaded him to move to Phoenix, where he has since made a significant impact in our culinary scene, working at esteemed establishments such as LGO Hospitality's Chelsea's Kitchen and Genuine Concepts' The Vig.
Known for his international and local culinary expertise, Gomez has developed a distinctive style known as New American Cuisine, a style that harmoniously combines locally sourced ingredients with traditional and contemporary cooking methods from diverse cultures.
Under Gomez's leadership, Humble Bistro has become a beloved dining destination. Due to its focus on fresh artisanal bites, commitment to fresh quality ingredients, and Gomez's culinary finesse, it’s solidified its reputation as a must-visit establishment for food and wine enthusiasts in the East Valley.

Start your meal off with the epically creative Bistroboard, a unique twist on a charcuterie board that features a variety of luxurious cheeses and charcuterie, the uniquely delicious cauliflower tahini, caprese salad, freshly made jalapeño hummus, grilled artichokes, EVOO-poached wild mushrooms, whipped ricotta with chefs own chili honey, crispy Brussels sprouts, and warm Forno bread.
One unique item that will turn even the most reluctant eater into a fungi fan is the Cremini Sachetti, fresh handmade stuffed pasta of roasted cremini mushrooms & cheese in a delectable brown butter, truffle & garlic confit sauce, finished with whipped imported ricotta, lemon zest, chili flakes & basil oil.
The (Not So) Humble Caesar salad is another popular choice, featuring romaine lettuce, garlic breadcrumbs, jalapeño Caesar dressing, crispy Brussels sprout leaves, parmesan and pecorino cheese, and a perfectly cooked seven-minute egg.
And of course, guests can't go wrong with one of Chef Gomez's wood-charred and perfectly bubbly pizzas, with the Gentleman pizza being a fan favorite. The secret to these Neapolitan-inspired pizzas lies in the crust, which is made with a sourdough starter and local flour with a high gluten content. The dough is allowed to rise for 72 hours, resulting in a flavorful and perfectly textured crust. In addition to pizzas, the versatile sourdough-based dough is used in various other dishes across the menu, such as forno bread, pita bread for the charged jalapeño hummus, bread for the Humble Craveable sandwiches, and even the English muffin for brunch (arguably the best English muffin this author has eaten).
Speaking of brunch, the menu at Humble Bistro is carefully crafted to satisfy both traditional and adventurous palates. Popular brunch items feature fluffy French style scrambled eggs with house made candied bacon, Humble Bennys that come in multiple options and are all served with homemade hollandaise on those above mentioned English muffins, mouthwatering Belgium Style waffles with pearled sugar and Humble enchiladas that shines with chefs grandmothers sauce recipe.

This time, they are diving into the world of seafood with a soon-to-be-launched new concept centered around oysters and bubbles. With his expertise in creating unique dining experiences, Chef Gomez aims to introduce Phoenix to a one-of-a-kind seafood destination. The new establishment will boast a chic and vibrant ambiance, reminiscent of coastal oyster bars. The menu will feature an array of oyster varieties, carefully curated to satisfy every palate, giving guests the opportunity to embark on an exquisite journey through the flavors of the sea. To complement the oyster selection, the new concept will also offer an extensive collection of sparkling wines and champagne, affectionately referred to as "bubbles." Whether it's a crisp and refreshing Prosecco or a luxurious Champagne, guests can expect the perfect pairing for their oyster indulgence.
