You know spring starts to whisper in the air when winter squash loses its spot on the menu to asparagus, spring peas, cherries and lemon. All of sudden, we have a brand new dining scene as restaurants reinvent themselves with the first signs of spring.

Terra Tempe Kitchen and Spirits at the Westin Tempe is jumping into springtime with bright and refreshing changes to its menu and Chef Mario Ventura has seized the opportunity to do a little spring cleaning on the menu, swapping out his warm and hearty comfort foods for vibrant, spring dishes.

Start with Pan Para El Alma, a fresh and innovative take on a bread basket, with rosemary garlic focaccia, jalapeno-sesame lavash, brazilian cheese rolls served with fresh lingonberry butter, a bright orange cream cheese, and local Queen Creek Olive Mill olive oil. Follow with the beautifully light yet vibrant Mexican Prawns with shallots, garlic, and charred lemon. While a standard on the menu, Terra's Hot Stone featuring Westholme Waygu has also gotten a fresh facelift, with a new micro salad with an incredible cherry vinagrette (I could have eaten an entire dish of it), cranberry pistachio biscotti (I actually saved it to go with my standard Old Fashioned and it was a beautiful couple), and a tart cherry gelee that meshed beautifully with the tender Waygu.

Meatier favorite, the Aciote Pibil Chicken (always one of my favorites here), is a delightful suis vide chicken dish now with a lighter mole verde, roasted zucchini, carrots and a zesty cilantro-red onion salad. And I can't forget the fabulous new Spring Raviolis! Delicate spinach and ricotta ravioli with fresh asparagus, spring peas, lemon, and pea tendrils. If that doesn’t scream spring, I don’t know what does.

We all know it's not in me to pass on dessert, and two of their new seasonal sweets knocked my socks off. The apple empanadas were cozy and delicious but it was the unique take on creme brulee that had me ooh-ing and awe-ing with its lively, fruity topping and stunning presentation that more than matched its flavor (I feel dragonfruit is woefully neglected, yet here it presented a pop of freshness to this light but decadent dessert).

Make your reservation on OpenTable to check out their new menu today!

* Also, the new Brunch menu has gone through some amazing changes! I haven't had a chance to check them out YET, but if its anything like dinner, it will be a must if you are in Tempe.
